INGREDIENTS
4 soft shell crabs, (cleaned)
1 cup low fat milk
1/2 cup all purpose flour
1/4 teaspoon paprika
4 tablespoons butter
Salt & pepper to taste
PREPARATION
Soak crabs in milk for 30 minutes,
Combine flour, paprika, salt & pepper in a bag and shake well
Remove crabs from milk and pat dry
Shake crabs in bag one at a time in seasoned flour, remove any excess
Melt 2 tablespoons of butter in a large non-stick fry pan.
Cook 2 crabs, med high heat, 4 to 5 min per side, until crispy
Drain on paper towels.
Repeat process for next 2 crabs.
